 Delicious Irish Skillet Potatoes Recipe

Simple Recipe for Irish Skillet Potatoes

I like making these potatoes with my corned beef when I don't want boiled potatoes. They're really easy to make and taste delicious. They're also good as leftovers with a fried egg on top!

Serves: 4 to 6 people Preparation Time: 10 minutes

Ingredients:

  • 2 large Russet potatoes, thinly sliced
  • 1 tablespoon of caraway seeds
  • 2 tablespoons of dried parsley
  • 4 tablespoons of green onions, thinly sliced
  • 2 cloves of garlic, sliced
  • ½ stick of butter, sliced
  • Salt and pepper to taste

Steps:

  1. Arrange the potato slices in a circle in a skillet or a pie pan.

  2. Spread butter, seasoning, and garlic on top of the potatoes.

  3. Bake at 425 degrees Fahrenheit for 20 minutes. Check to make sure they're not burning. Cook until the bottom is crispy.

  4. Garnish with green onions.

These potatoes are perfect for my Corned Beef and Cabbage Sandwich!
