Confetti Cole Slaw Recipe
Confetti Cole Slaw is a really amazing Cole Slaw! Seriously. This yummy Cole Slaw has shredded cabbage, carrots, and colorful bell peppers, along with finely diced red onion, celery, and pineapple in a deliciously sweet Cole Slaw Dressing. It’s perfect for backyard barbecues or potluck parties.
Last fall, we invited a couple of our neighbors over for a cookout. John grilled ribs and asparagus, and I made Creamy Sweet Corn along with this fantastic Confetti Cole Slaw. One neighbor brought Potato Salad, and the others brought coconut and chocolate cream pies from a nearby specialty shop. It was a fantastic meal, and everyone loved the Cole Slaw! Who would have guessed?
I combined a couple of my favorite Cole Slaw recipes but added various colors of bell peppers to give it a "confetti" look. I gave some leftovers to our guests, and they later told us how much they enjoyed it again!
Confetti Cole Slaw is perfect for holidays like Memorial Day or the Fourth of July. But it’s also great for potlucks and hanging out with friends, like we did. I used bottled Litehouse Cole Slaw Dressing, and it worked perfectly. Enjoy!

Equipment:
- 1 food processor
- 1 large mixing bowl or salad bowl
- 1 wooden spoon
- 1 sharp knife for dicing vegetables
- Measuring cups
- Measuring spoons
Ingredients:
- 1 head cabbage, shredded
- 2 medium carrots, shredded
- 1/2 medium orange bell pepper, diced
- 1/2 medium red bell pepper, diced
- 1/2 medium yellow bell pepper, diced
- 1/2 medium green bell pepper, diced
- 1/3 cup red onion, finely diced
- 1 cup celery, finely diced
- 8 oz. can pineapple tidbits, drained
- 1 cup LiteHouse Cole Slaw Dressing, or as desired
Instructions:
Put cabbage and carrots in a food processor and slice or shred.Notes:
