I really like to put dumplings in my stew and chili recipes, especially in this Hearty Beef Stew with Dumplings. First, I used my favorite beef stew recipe. Then, I added my best dumpling recipe and cooked it all in a crockpot, making it super easy. This dish is definitely a winner!

In this Hearty Beef Stew with Dumplings, I put lots of veggies, not just the usual ones like potatoes, carrots, and celery, but also green beans, peas, corn, mushrooms, and stewed tomatoes. I seasoned the stew with Worcestershire sauce and some of my favorite herbs. The dumplings are also well seasoned, not bland at all.

This meal is very filling and satisfying, perfect as a one-dish meal. Plus, you can make it in a slow cooker, so you don't have to watch it constantly. It's great for any time of the year, not just when it's cold outside.

Ingredients:

  • Beef Stew:
    • Stew beef
    • Flour
    • Beef broth
    • Red potatoes
    • Carrots
    • Celery
    • Onion
    • Stewed tomatoes
    • Sliced mushrooms
    • Worcestershire sauce
    • Sea salt
    • Ground black pepper
    • Dried thyme
    • Dried chives
    • Dried parsley
    • Bay leaves
    • Frozen peas, corn, and green beans
  • Dumplings:
    • All-purpose flour
    • Baking powder
    • Sea salt
    • Ground black pepper
    • Dried thyme
    • Dried chives
    • Dried marjoram
    • Dried parsley
    • Egg
    • Half-and-half
    • Salted butter

Instructions:

Dredge stew beef in flour.

Spray crockpot with cooking spray and add beef and broth. Cook on high for about 2 hours.

Add potatoes, carrots, celery, onion, tomatoes, mushrooms, and seasonings. Continue cooking on high for another 2 hours.

Remove bay leaves and add peas, corn, and beans. Cook for about 30 minutes.

Add dumplings and cook for 45 minutes to an hour until cooked through.

For the dumplings, mix dry ingredients in one bowl and wet ingredients in another. Combine and drop onto hot stew. Cook for 45-60 minutes until done.

Note: Avoid opening the lid while the dumplings are cooking to keep the heat in. Adjust cooking times as needed based on your slow cooker's heat.
