    Ingredients:

    1. 1 cup cornmeal (yellow is my preference, but white works too)
    • 1 cup all-purpose flour
    • 4 tsp baking powder
    • 1 tsp salt
    • 2 large eggs
    • 1 cup buttermilk
    • 1/3 cup pure honey plus 2 tbsp
    • 1 stick butter (half melted, half softened)
    • 2 tsp vegetable oil
    • 2-3 large jalapeno peppers (diced and seeds removed)

    Instructions:

    1. In a big mixing bowl, put cornmeal, flour, baking powder, and salt. Mix them well, then add eggs, buttermilk, and melted butter. Mix until it's well combined.
    2. Pour 2 tsp of vegetable oil into a pan and heat it on medium. Put the diced jalapenos into the pan and cook until they become soft. Set aside.
    3. Pour honey into the cornbread batter, then add the diced jalapenos. Mix until it's all well combined.
    4. Spray a 9x11 baking dish with cooking spray and pour the cornbread batter into the dish.
    5. Bake at 400 degrees for 20-25 minutes.
    6. In a small bowl, mix 1/2 stick of butter with 2 tbsp of honey until it's creamy.
    7. Take the cornbread out of the oven and brush the honey and butter mixture on top.
    8. Let it cool for 5 minutes to allow the honey butter to soak in, then serve!
