Easy Rib Roast Recipe for a Delicious Holiday Meal

Ingredients:

*This recipe is for a 4-pound roast, but you can adjust it for a bigger roast. 4 lb rib roast (prime or choice) 1 to 2 sticks of softened butter 1 tablespoon minced rosemary 1 tablespoon garlic powder 1 tablespoon onion powder 1 tablespoon black pepper 2 teaspoons coarse or Kosher salt

Instructions:

Mix the softened butter with rosemary, garlic powder, onion powder, black pepper, and salt.

Let the rib roast sit at room temperature. Then, pat it dry with a paper towel and season it with salt and pepper.

Spread the butter mixture over the roast.

Place the roast on a rack in a roasting pan. Preheat your oven to its highest temperature (usually around 550 degrees Fahrenheit).

Cook the roast uncovered at the highest heat for 20 minutes. Then, without opening the oven door, reduce the heat to 150 degrees Fahrenheit and cook for 30 minutes per pound for rare, or 250 degrees Fahrenheit for medium.

After cooking, turn off the oven and let the roast rest inside for 40 minutes. Then, remove it from the oven, cover it loosely with foil, and let it rest for another 20 minutes in a warm spot.

Check the temperature of the roast. For rare, it should be 125 degrees Fahrenheit.
Slice the roast, saving the bone for soup.

To make au jus, use the drippings from the roast, an au jus packet, and some water.
  1. For whipped horseradish, whip heavy cream with horseradish until fluffy. Add chives if desired.
